I have some locations where a second monitor is not availbe. Videos & karaoke work fine but with the latest beta I have some videos do not take up all the screen. I mean you can still see the now playing page at the top and bottom of the screen. How can I fix this?

You can't easilly it's due to the way they are encoded. Videos and karaoke on a single screen are not really any use commercially because someone will come up and turn them off if they want to select a track which is why it's not really recommended.
So its not etouch its the video it self?

Yes it is either not scaled or the codec it uses dosnt blank off the unused borders
